While you wait for your official Il Forno fix (our Star Island pizzeria reopens April 30th), we’re sharing the recipe for Tartufo Pizza, one of our favorite, award-winning pies. You can recreate this family-friendly, vegetarian pie at home using your favorite pizza dough recipe (or frozen dough from your local gourmet grocer or pizzeria) in just a few quick steps:



One ball of your favorite pizza dough (250 grams of dough for a 10-inch pizza) 

1 cup Robiola cheese 

1 cup Trumpet or Porcini mushrooms 

1/2 cup fresh mozzarella 

1/4 cup grated Parmigiano aged 24 months

Truffle oil for drizzling

Sage (optional) 


  • Preheat oven to 525°. 


  • Place dough on a 10" pie pan and, pressing gently with your fingertips, stretch the dough until you fill the circle of the pan.


  • If you like a thicker crust, wait a few minutes for the dough to rise again after you’ve shaped the crust on the pie pan.


  • Spread the Robiola cheese evenly over the dough. Sprinkle even layers of the fresh mozzarella and grated Parmigiano evenly over the Robiola, and then arrange the mushrooms evenly over the cheese. Drizzle evenly with truffle oil. 


  • Sprinkle any remaining mozzarella and Parmigiano cheese evenly over the top. 


  • Bake for 12 minutes, or until the crust is lightly browned. 


  • Remove from oven and sprinkle with sage. Cut into eight slices. Serve immediately.
