Behind the Bar with Casamigos

Behind the Sunset Pier Bar at our Star Island Resort, you will find some of our favorite summer cocktails from our friends at Casamigos. When summer starts, there’s nothing better than a fruity, herby or frozen drink in hand!

There’s a great variety of summer cocktails that play on the flavors of the season: sweet watermelon and juicy peaches, herbaceous mint and cucumber, and bright berries. Even better: ice cold summer drinks are the perfect way to beat the heat, but really: we want to drink them all. Let summer drink season begin! Check out these recipes so you can recreate them at home.

SPICY MANGORITA
1.5 oz. Casamigos Reposado OR Casamigos Blanco Tequila
.75 oz. Mango Purée by Perfect Purée®
.75 oz. Fresh Lime Juice
.5 oz. Simple Syrup
8 – 10 Cilantro Leaves
2 Serrano Slices OR 2 Dashes Firewater Bitters
½ Thick Rim Equal Parts Salt/Sugar/Tajín®
Garnish Cilantro Sprig
Wet ½ rim of rocks glass with lime wheel or wedge then dip into salt mixture. Combine all ingredients into tin shaker and muddle cilantro. Add ice, shake vigorously and fine strain into rimmed rocks glass. Add fresh ice and garnish.

CASA REFRESHER
1.5 oz. Casamigos Blanco Tequila
1 oz. Fresh Watermelon Juice
OR 4 – 5 Watermelon Chunks (1")
.75 oz. Fresh Lime Juice
.5 oz. Simple Syrup
8 – 10 Mint Leaves
4 Dashes Peychaud's® Bitters
Garnish Mint Sprig and Watermelon Cube through Skewer Combine all ingredients into a tin shaker. Muddle fruit/herbs. Add ice, shake vigorously, and fine strain into rocks glass. Add fresh ice and garnish.

SPICY VERDE MARGARITA
1.5 oz. Casamigos Blanco Tequila
1 oz. Fresh Lime Juice
.5 oz. Simple Syrup
4 Basil Leaves
2 Cucumber Slices
2 Serrano Slices OR 2 Dashes Firewater Bitters
½ Thick Rim Equal Parts Salt/Sugar/Tajín® Mixture
Garnish Large Basil Leaf and Serrano Slice
Wet ½ rim of rocks glass with lime wheel or wedge then dip into salt mixture. Combine all ingredients into tin shaker. Muddle fruit/herbs. Add ice, shake vigorously and fine strain into rimmed rocks glass. Add fresh ice and garnish.
